hi. I am back with another world class recipe lmao. This one is basically a stew/curry. Different places use different spices in their curry to create different flavors and spice levels. I do not have a picture because I forget everything. Anyway, hope you enjoy it!
stuff you need from the store
~ 2 Sweet Potato
~ 1/2 Pound Kale
~ 2 Cups Legumes
~1 Sweet Onion
~1 Tablespoon Minced Garlic
~Tablespoon Cumin
~1/2 Tablespoon Crushed Red Pepper
~1/2 Tablespoon Smoked Paprika
~1/8 Tablespoon Salt
~8oz Tomato Paste
~1/2 Cup Peanut Butter
~4 Cup Vegetable Broth
~1 Tablespoon Olive Oil (you can leave out and use water/vegetable broth or use a different oil if you want)

alriiiiiight! so, to get started you want to peel the sweet potatoes and cut them into small cubes, then slice the onion. From there add your oil (or water or both) to the pot and add the sweet potatoes, onions and spices (garlic, cumin, crushed red pepper, smoked paprika, salt) and allow everything to brown/caramelize a bit so the spices are fragrant and everything is cooked a bit. Next, add your kale, legumes of choice, tomato paste, peanut butter and vegetable broth. Bring everything to a boil, then set to simmer and leave uncovered for 20-30 minutes, stirring occasionally. You want everything to be cooked and the liquid to become thick like a stew/sauce. You can eat it alone or serve it with rice, quinoa or even naan.

hope you enjoy the recipe, it was something I made up stoned years ago. Probably one of my favorite creations I have ever made. For slight adjustments, you can add different greens or beans, carrots can be good too. You can also crack eggs over the top about 10 minutes before it is finished and it adds some more protein and such to it.
